Ever wonder how important those best-before and use-by dates truly are? According to the Waste Resources Action Program (Wrap), 4.2 metric tonnes of food are thrown away every year in the United Kingdom, which ultimately results in a huge impact on the environment, not to mention a huge financial cost.

The main reason we throw food away is that we don’t use it in time, typically looking at the use-by date on the packet rather than the food itself. Here, chefs Angela Hartnett, Tamal Ray, Ruby Tandoh and Thomasina Miers explain what they trash and what they keep and why.
